Je me rends compte qu’en inscrivant mon poulain…..j’ai oublié de "vendre" mon offrande comme quelques-uns plus haut…(ça fait parti du décorum de tout bon Dreamer)….avec quelques notes bien choisies…..

As is the practice at this winery, they hold back 50 or so cases of their finest vintages for release after a decade. The current release of their library selection is the 1994 Cabernet Sauvignon, a magnificent effort that, for me, is one of Togni’s six or seven finest wines. Its deep plum/purple color reveals only a touch of lightening at the edge. A glorious perfume offers up aromas of plums, figs, creme de cassis, smoke, hickory spice, and high quality cigar tobacco. In a blind tasting, this California Cabernet could easily be mistaken for a great Pauillac given its structure, density, richness, and perfume. This 1994 is just beginning to move into its adolescence. Even though it has 20-25 years of life remaining, it is approachable. It is a monumental Cabernet Sauvignon from one of the valley’s legacy producers.

Cabernet Sauvignon is king at Togni, and they are wines of extraordinary concentration, flavor dimension, and aging potential. I have consumed two bottles of the 1994 Cabernet Sauvignon, which I am sure would cause Philip Togni to chastise me for committing infanticide, but it is such a remarkably rich, multi-dimensional wine that I have been unable to leave it alone. Extremely full-bodied, with extraordinary fruit purity, this wine is, aromatically and texturally, compelling stuff. Unfortunately, the 1994 is already sold out, but those lucky enough to have purchased a few bottles own a monumental mountainside Cabernet Sauvignon that should age gracefully for 25-30 years. Incredibly, in an open bottle, this wine held up without oxidation an amazing six days!

Part mountain goat, part man, Philip Togni continues to fight vineyard diseases such as Pierce's, and frightfully low yields from his formidably steep Spring Mountain vineyards to produce some of California's most exciting wines.

Since nearly 70% of Togni's wines are sold directly to wine consumers, it is incumbent upon readers wanting an opportunity to buy this wine to get their names on the winery's mailing list.

Je vais changer mon offre de départ par une bouteille du Château Haut-Brion 1983

"A very earthy, melted asphalt, creosote-like nose intermixed with compost, decaying autumnal vegetation, and herb-tinged fruit is actually more appealing than it might sound. In the mouth the wine is fleshy, medium-bodied, relatively lush, but the garnet color is showing considerable amber, and the finish starts to dry out after the wine sits in the glass for just a mere five minutes." Tu iras voir dans les éditions précédentes.....je suis du genre à mettre ma vraie belle grande offrande au début.....

Au contraire de certain organisateur que je connais.....qui branle dans le manche.....!!!

Adam_Bomb avec Hommage à Jacques Perrin 2007.

C'est la bouteille que je voulais inscrire en partant vu la note et le prix vendu au usa, mais pour l'avoir gouté il y a 6 mois à peine elle sera une superbe bouteille de dreamer en 2018+.
