Clos de Tart étant ajouté, je dois revoir mon jeu...
Je change donc mon offrande pour un vin au début de son plateau. Un superbe Bordeaux, dans un millésime exceptionnel... juste à point.

Chateau Lynch Bages 1989

The 1989 has taken forever to shed its formidable tannins, but what a great vintage of Lynch Bages! I would rank it at the top of the pyramid... Its dense purple color reveals a slight lightening at the edge and the stunning bouquet offers classic notes of creme de cassis, subtle smoke, oak and graphite. Powerful and rich with some tannins still to shed at age 22, it is still a young adolescent in terms of its evolutionand will benefit from another 4-5 years of cellaring. It should prove to be a 50 year wine. (8/ 2011)

Delivers so much blackberry, leather and dried fruits on the nose. Full-bodied, with ultrapolished tannins and a silky mouthfeel. The palate turns to leaves, cedar and dried berries on the finish, which goes on and on. This is still reserved for the vintage, suggesting a long life ahead. Just coming around now, but will improve many years ahead. I have always loved this Lynch. (2010)

Deep ruby-red. Still youthfully closed but highly complex nose hints at cassis, minerals, gunflint and Oriental spices. Quite clean and juicy, boasting lovely precision and size to its flavors of small dark berries, smoky plum, coffee and minerals. This pure, long wine finishes with enticingly soft flavors of red cherry and marzipan. Though rich and opulent, this graceful, seamless wine can still age effortlessly. Maybe the best Lynch-Bages of the last 30 years. (1/ 2012)

Il y a maintenant 2 superbes Bordeaux,1superbe Champagne,1 superbe Bourgogne,1superbe Espagnol et un superbe Barsac,que manque t-il?

Honnêtement, aucun des vins proposés n'a réellement besoin d'être moussé. Mais c'est amusant de le faire alors voici mes arguments en faveur du Vega Sicilia Unico 2002.

1. Sa qualité indiscutable d'un millésime à l'autre. Il n'y a que l'excellence qui est permise pour le Unico. C'est le vin le plus reconnu d'Espagne, vin mythique depuis plus de 100 ans.
2. Un Bordeaux, un Bourgogne, un Américain, un Italien, un blanc, un rouge, des bulles/du sucre, et bien sur un espagnol. Le tour du monde vinicole 5 étoiles en un repas !
3. Wine Advocate 95/100

"Having skipped over releasing a 2001 due to frost damage, the 2002 Unico is a result of a severe selection as attested by the label which shows that just 42,932 bottles were produced instead of 108,536 in 2000. It has an incredibly intense nose, much more linear and focused than the more flamboyant 2000, with scents of dark cherry, creme de cassis and a touch of honey and melted dark chocolate. Roederer is one of the most impressive estates in Champagne. Few houses have managed to reconcile this level production in a negociant operation while achieving such a consistently outstanding level of quality across the entire range. Roederer owns 214 hectares of vineyards, which is enough to meet 65-70% of the house’s needs. The vintage wines are made from 100% estate-grown fruit, while the NV wines are made with the addition of roughly 45% purchased fruit. Generally speaking, malolactic fermentation and oak aging are used to a higher degree for the NV range than for the vintage wines. Dosage varies as well, and ranges from 11-12 grams for the entry-level wines to 9-10 for the tete de cuvee Cristal. Unfortunately because if its rabid following the vast majority of Cristal is drunk upon release, which is ironic, if not downright tragic, considering Cristal is a wine that starts peaking around age 15-20, and that can last much longer under ideal storage conditions. With Cristal, Chef de Caves Jean-Baptiste Lecaillon aims to make an ageworthy Champagne that is fresh and floral when young, but that is also capable of considerable development with bottle age, qualities the finest Cristals have in spades. Peut-être devrais-je changer mon offrande pour un Coche-Dury ?

J'ai encore quelques heures pour y penser.

A moins que j'y aille avec un gros blanc de Sine Qua Non ?
